Ingredients

  • 1 cup Peanut butter (creamy)
  • 0.5 cup Unsalted butter (softened)
  • 1 teaspoon Vanilla extract
  • 3.5 cups Powdered sugar
  • 2 cups Semi-sweet chocolate chips
  • 1 tablespoon Vegetable shortening

Directions

Step 1

In a large mixing bowl, combine the peanut butter, softened butter, and vanilla extract. Use an electric mixer to beat the ingredients together until smooth and creamy.

Step 2

Gradually add the powdered sugar, about 1 cup at a time, mixing well after each addition. The mixture should become stiff and easy to shape by hand.

Step 3

Roll the peanut butter mixture into small balls, approximately 1 inch in diameter. Place them on a baking sheet lined with wax or parchment paper.

Step 4

Refrigerate the peanut butter balls for 20-30 minutes or until firm.

Step 5

While the peanut butter balls are chilling, melt the semi-sweet chocolate chips and vegetable shortening in a heatproof bowl over a pot of simmering water, stirring frequently, or microwave in 30-second increments until smooth. Be careful not to overheat the chocolate.

Step 6

Using a toothpick, dip each peanut butter ball into the melted chocolate, leaving a small circle of peanut butter exposed at the top to resemble a buckeye nut. Gently shake off the excess chocolate and place the dipped ball back on the prepared baking sheet.

Step 7

Once all the balls have been dipped, refrigerate them again until the chocolate is fully set, about 20-30 minutes.

Step 8

Remove the toothpicks by twisting gently and smooth over the holes if desired. Serve and enjoy!
