Ingredients

  • 4 medium Potatoes
  • 1 large Onion
  • 2 medium Tomatoes
  • 2 teaspoons Ginger-garlic paste
  • 1 small Green chili
  • 3 tablespoons Vegetable oil
  • 1 teaspoon Mustard seeds
  • 1 teaspoon Cumin seeds
  • 0.5 teaspoon Turmeric powder
  • 1 teaspoon Red chili powder
  • 2 teaspoons Coriander powder
  • 1 teaspoon Garam masala
  • 1 teaspoon Salt
  • 1.5 cups Water
  • 2 tablespoons Fresh cilantro

Directions

Step 1

Peel and dice the potatoes into 1-inch cubes. Finely chop the onion, tomatoes, and green chili.

Step 2

Heat the vegetable oil in a large saucepan over medium heat. Once hot, add the mustard seeds and cumin seeds. Let them splutter for about 30 seconds.

Step 3

Add the chopped onion to the pan and sauté for 4-5 minutes until the onions turn golden brown.

Step 4

Stir in the ginger-garlic paste and green chili. Cook for another 1-2 minutes until the raw smell disappears.

Step 5

Add the chopped tomatoes to the pan. Cook for 5-7 minutes until the tomatoes are soft and oil starts to separate from the mixture.

Step 6

Stir in the turmeric powder, red chili powder, coriander powder, and salt. Mix well to combine all the spices.

Step 7

Add the diced potatoes to the pan and mix to coat the potatoes with the masala mixture.

Step 8

Pour in the water, stir well, and bring the mixture to a boil.

Step 9

Reduce the heat to low, cover the pan, and simmer for about 15-20 minutes or until the potatoes are tender.

Step 10

Sprinkle garam masala and fresh cilantro over the curry. Stir once more to combine flavors.

Step 11

Serve hot, garnished with extra cilantro if desired, alongside rice or roti.
