Ingredients

  • 4 pieces (approximately 4-6 ounces each) thinly sliced beef (top round or beef sirloin)
  • 2 tablespoons Dijon mustard
  • 1 medium yellow onion, thinly sliced
  • 4 pieces dill pickles, cut lengthwise into quarters
  • 4 slices bacon, sliced in half
  • 2 tablespoons all-purpose flour
  • 1 tablespoon olive oil
  • 2 cups beef broth
  • 0.5 cup red wine (optional for richer flavor)
  • 3 medium carrots, peeled and cut into chunks
  • 1 leaf bay leaf
  • 0 to taste salt and freshly ground black pepper

Directions

Step 1

Place each piece of beef between two sheets of plastic wrap and pound with a meat mallet to about 1/4-inch thickness. Lightly season with salt and pepper.

Step 2

Spread a thin layer of Dijon mustard over the surface of each piece of beef.

Step 3

Lay a slice of bacon, a few onion slices, and a pickle spear on each piece of beef. Roll tightly and secure with kitchen twine or toothpicks.

Step 4

Coat the rouladen lightly with flour, shaking off any excess.

Step 5

Heat the olive oil in a large skillet or Dutch oven over medium-high heat. Sear the rouladen on all sides until browned, about 3-4 minutes per side. Remove and set aside.

Step 6

Deglaze the pan with the red wine (if using) or a small splash of beef broth, scraping up any browned bits from the bottom of the pan.

Step 7

Return the rouladen to the pan and add the beef broth, carrots, and bay leaf. Bring to a simmer, then reduce the heat to low, cover, and cook for 1.5 hours or until the beef is tender.

Step 8

Remove the rouladen and carrots from the pan and keep warm. Increase the heat and reduce the sauce until slightly thickened, about 5 minutes. Season with salt and pepper to taste.

Step 9

Remove the toothpicks or twine from the rouladen and serve hot with a generous spoonful of the sauce and the cooked carrots on the side.
