Ingredients

  • 1 cup all-purpose flour
  • 0.5 cup unsalted butter, softened
  • 0.5 cup granulated sugar
  • 1 teaspoon almond extract
  • 0.5 cup sliced almonds
  • 0.25 teaspoon salt

Directions

Step 1

Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.

Step 2

In a mixing bowl, cream together the softened butter and granulated sugar until light and fluffy, about 2-3 minutes.

Step 3

Add in the almond extract and mix until well incorporated.

Step 4

Sift in the all-purpose flour and salt. Mix gently until the dough starts to come together.

Fold in the sliced almonds until evenly distributed throughout the dough.

Take small portions of the dough (about one tablespoon each) and roll them into balls.

Step 7

Place the dough balls about 2 inches apart on the prepared baking sheets.

Using the bottom of a glass cup, gently press each dough ball to flatten it to about 1/4 inch thick.

Bake in the preheated oven for 10-12 minutes, or until the edges of the cookies are golden brown.

Remove the baking sheets from the oven and let the almond thins cool on them for 5 minutes.

Transfer the cookies to a wire rack to cool completely before serving.
