Ingredients

  • 500 grams All-purpose flour
  • 250 grams Unsalted butter
  • 150 grams Granulated sugar
  • 2 large Eggs
  • 2 tablespoons Sour cream
  • 1 teaspoon Baking powder
  • 1 pinch Salt
  • 1.5 kilograms Apples (e.g., Granny Smith)
  • 2 teaspoons Cinnamon
  • 2 tablespoons Powdered sugar (optional, for dusting)
  • 1 tablespoon Lemon juice
  • 2 tablespoons Fine breadcrumbs

Directions

Step 1

Preheat your oven to 180°C (355°F) and grease or line a 9x13-inch baking dish with parchment paper.

Step 2

In a large bowl, combine the all-purpose flour, baking powder, and a pinch of salt. Cut the cold butter into cubes and rub it into the flour mixture with your fingers until it resembles breadcrumbs.

Step 3

Add the sugar, eggs, and sour cream to the flour mixture. Knead everything together to form a smooth dough. Divide the dough into two equal portions, wrap them in plastic wrap, and refrigerate for 20 minutes.

Step 4

While the dough chills, peel, core, and grate the apples. Place them in a large bowl, mix with the cinnamon, granulated sugar (to taste), and lemon juice. Let the mixture sit for 10 minutes, then squeeze out the excess juice to prevent sogginess.

Step 5

Roll out one portion of the chilled dough into a thin rectangle, large enough to cover the bottom of your prepared baking dish. Transfer the rolled dough to the dish and trim any excess.

Step 6

Sprinkle the dough with the fine breadcrumbs to help absorb moisture from the apples. Spread the apple mixture evenly on top.

Step 7

Roll out the second portion of dough into a rectangle and carefully place it over the apple filling. Trim any excess, and press the edges down to seal. Prick the top layer with a fork to allow steam to escape during baking.

Step 8

Bake in the preheated oven for 30-35 minutes, or until the top is golden brown.

Step 9

Remove from the oven and let it cool completely in the pan. Dust the top with powdered sugar before serving.

Step 10

Slice into squares and enjoy your Almás Pite with a cup of tea or coffee.
