Ingredients

  • 4 cups chicken broth
  • 3 tablespoons soy sauce
  • 1 tablespoon mirin (Japanese sweet rice wine)
  • 1 teaspoon sesame oil
  • 4 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • 2 tablespoons miso paste
  • 3 packs ramen noodles (fresh or instant, without seasoning packet)
  • 2 eggs
  • 2 cups spinach or bok choy
  • 3 scallions, sliced
  • 2 sheets nori (seaweed), cut into small strips
  • 1 cup cooked chicken, shredded or sliced (optional)
  • 0.5 cup corn kernels (optional)
  • 1 teaspoon red pepper flakes or chili oil (optional)

Directions

Step 1

In a medium-sized pot, heat sesame oil over medium heat. Add minced garlic and grated ginger and sauté for 1-2 minutes until fragrant.

Step 2

Add chicken broth, soy sauce, mirin, and miso paste to the pot. Stir well to incorporate the miso paste and bring the mixture to a gentle simmer.

Step 3

While the broth is simmering, prepare the ramen noodles according to the package instructions in a separate pot. Drain and set aside.

Step 4

To make soft-boiled eggs, bring water to a boil in a small saucepan. Gently lower the eggs into the water and boil for 6-7 minutes. Transfer the eggs to an ice bath for 2 minutes before peeling. Cut each egg in half lengthwise.

Step 5

Add spinach or bok choy to the simmering broth and cook for 2-3 minutes until wilted.

Step 6

If using optional cooked chicken or corn kernels, add them to the broth to heat through.

Step 7

Divide the cooked noodles between two bowls. Ladle the hot broth over the noodles, ensuring an even distribution of vegetables and optional chicken or corn.

Step 8

Top each bowl with halved eggs, sliced scallions, nori strips, and a sprinkle of red pepper flakes or a drizzle of chili oil, if desired.

Step 9

Serve immediately and enjoy Allysha's Really Awesome Ramen!
