Ingredients

  • 2 cups Almond flour
  • 0.25 cup Flaxseed meal
  • 0.5 cup Dried unsweetened cranberries
  • 0.25 cup Coconut oil (melted)
  • 0.25 cup Maple syrup
  • 1 teaspoon Vanilla extract
  • 0.5 teaspoon Ground cinnamon
  • 0.25 teaspoon Sea salt
  • 1 teaspoon Lemon zest
  • 2 tablespoons Water

Directions

Step 1

In a large mixing bowl, combine the almond flour, flaxseed meal, ground cinnamon, and sea salt. Mix until well combined.

Step 2

Add the dried unsweetened cranberries and lemon zest to the dry ingredients, stirring to distribute evenly.

Step 3

In a separate small bowl, whisk together the melted coconut oil, maple syrup, vanilla extract, and water until smooth.

Step 4

Pour the wet ingredients into the dry mixture and stir until a cohesive dough forms.

Step 5

Place the dough on a sheet of parchment paper and shape it into a flat, circular disk approximately 1 inch thick.

Step 6

Using a knife or dough cutter, slice the dough into 8 equal wedges, like a pizza.

Step 7

Carefully transfer the scone wedges onto a dehydrator tray lined with a non-stick sheet.

Step 8

Dehydrate the scones at 115°F (46°C) for 6-8 hours, or until they are firm to the touch and slightly crisp on the outside but still moist inside.

Step 9

Once fully dehydrated, remove the scones from the dehydrator and let them cool completely.

Step 10

Serve immediately or store in an airtight container in the refrigerator for up to one week.
