Ingredients

  • 3 cups broccoli florets
  • 1 cup raw cashews
  • 2 cups filtered water
  • 1 medium avocado
  • 1 clove garlic
  • 2 tablespoons lemon juice
  • 0.5 teaspoons sea salt
  • 0.25 teaspoons fresh ground black pepper
  • 2 tablespoons nutritional yeast (optional)

Directions

Step 1

Soak the raw cashews in water for 4-6 hours or overnight. Drain and rinse before using.

Step 2

Wash the broccoli florets thoroughly under cold water.

Step 3

In a high-speed blender, combine the broccoli florets, soaked cashews, filtered water, peeled and pitted avocado, garlic clove, lemon juice, sea salt, and black pepper.

Step 4

Blend the mixture on high speed until smooth and creamy. If the soup is too thick, add more filtered water, a tablespoon at a time, until you reach your desired consistency.

Step 5

Taste and adjust the seasoning by adding more sea salt, black pepper, or a splash of lemon juice if needed.

Step 6

If you want a cheesy umami flavor, blend in the nutritional yeast at this stage.

Step 7

Serve the soup immediately in bowls, garnished with a drizzle of olive oil, a sprinkle of black pepper, or some chopped fresh herbs, if desired.
