Ingredients

  • 4 large Russet potatoes
  • 3 tablespoons Olive oil
  • 1 teaspoon Paprika
  • 1 teaspoon Ground cumin
  • 1 teaspoon Ground coriander
  • 1 teaspoon Garlic powder
  • 0.5 teaspoon Turmeric
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Fresh parsley
  • 0 Tahini or yogurt (optional, for dipping)

Directions

Step 1

Preheat your oven to 425°F (220°C) and line a large baking sheet with parchment paper for easy cleanup.

Step 2

Wash the potatoes thoroughly and pat them dry. Leave the skins on for extra texture and nutrition, or peel them if desired.

Step 3

Cut the potatoes into evenly sized sticks, about 1/4 inch thick, so they cook uniformly.

Step 4

Place the potato sticks into a large mixing bowl and drizzle with olive oil. Toss to coat all pieces evenly.

Step 5

In a small bowl, combine paprika, ground cumin, ground coriander, garlic powder, turmeric, salt, and black pepper.

Step 6

Sprinkle the spice mixture over the potatoes and toss again until the potatoes are evenly coated in the spice blend.

Step 7

Spread the potatoes in a single layer on the prepared baking sheet, making sure they don’t overlap for maximum crispiness.

Step 8

Bake in the preheated oven for 20 minutes. Then, use a spatula to flip the fries, and cook for another 15-20 minutes, or until they are golden and crispy.

Step 9

Remove the fries from the oven and immediately sprinkle with fresh parsley for an herbaceous finish.

Step 10

Serve hot with tahini or yogurt for dipping, if desired. Enjoy Ali Baba's Oven Fries fresh out of the oven for the best texture and flavor.
