Ingredients

  • 3 large Ripe bananas
  • 150 grams Granulated sugar
  • 115 grams Unsalted butter
  • 2 large Eggs
  • 1 teaspoon Vanilla extract
  • 200 grams All-purpose flour
  • 1 teaspoon Baking powder
  • 0.5 teaspoon Baking soda
  • 0.25 teaspoon Salt
  • 1 teaspoon Ground cinnamon
  • 60 milliliters Whole milk
  • 50 grams Optional: Chopped walnuts or chocolate chips

Directions

Step 1

Preheat your oven to 175°C (350°F) and line a 12-cup muffin tin with cupcake liners or lightly grease the tin.

Step 2

In a large mixing bowl, mash the ripe bananas until smooth using a fork or potato masher.

Step 3

Add the granulated sugar and melted butter to the mashed bananas, then mix until well combined.

Step 4

Incorporate the eggs and vanilla extract into the banana mixture and whisk until the mixture is smooth.

Step 5

In a separate bowl, sift together the all-purpose flour, baking powder, baking soda, salt, and ground cinnamon.

Step 6

Gradually add the dry ingredients to the wet ingredients. Stir gently until just combined; do not overmix.

Step 7

Pour in the whole milk and fold until the batter is smooth. If desired, fold in the chopped walnuts or chocolate chips at this stage.

Step 8

Evenly distribute the batter into the prepared muffin tin, filling each cup about 3/4 full.

Step 9

Bake in the preheated oven for 20-25 minutes, or until a toothpick inserted into the center of a cake comes out clean.

Step 10

Remove the cakes from the oven and let them cool in the pan for 5 minutes, then transfer them to a wire rack to cool completely before serving.
