Ingredients

  • 250 g Bread flour
  • 50 g All-purpose flour
  • 6 g Instant yeast
  • 50 g Caster sugar
  • 5 g Salt
  • 10 g Milk powder
  • 175 ml Cold water
  • 1 large Egg
  • 50 g Unsalted butter

Directions

Step 1

In a large mixing bowl, combine the bread flour, all-purpose flour, instant yeast, caster sugar, salt, and milk powder. Stir well to evenly distribute the dry ingredients.

Step 2

Gently whisk the egg and add it to the flour mixture along with the cold water. Begin mixing the ingredients until they come together into a dough.

Step 3

Transfer the dough onto a clean, lightly floured surface and knead for about 8-10 minutes until it becomes smooth and elastic.

Step 4

Incorporate the butter into the dough. Knead the dough for another 5-7 minutes until the butter is fully absorbed, and the dough is soft and no longer sticky.

Step 5

Place the dough in a lightly greased bowl and cover it with plastic wrap. Allow it to proof in a warm place for 1 hour or until it doubles in size.

Step 6

Once the dough has risen, punch it down to release the air. Divide the dough into 12 equal portions and shape each into a round bun or your desired shape.

Step 7

Place the shaped dough on a baking sheet lined with parchment paper, leaving enough space between each piece. Cover with a clean kitchen towel and let it proof again for 45 minutes or until the buns double in size.

Step 8

Preheat the oven to 180°C (350°F) during the second proofing. Brush the buns with a thin layer of egg wash for a shiny, golden finish.

Step 9

Bake the buns in the preheated oven for 15-20 minutes or until golden brown and fully cooked through.

Step 10

Remove the buns from the oven and transfer them to a wire rack to cool slightly before serving.
