  • 0.5 pounds raw shrimp, peeled and deveined
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper
  • 4 pieces lemon wedges, for serving

Directions

Step 1

Heat the olive oil in a large, deep skillet or shallow pot over medium heat.

Step 2

Add the onion and garlic to the skillet and sauté until softened and fragrant, about 3-4 minutes.

Stir in the diced red bell pepper and cook for another 3 minutes.

Add the chopped tomatoes, paprika, and saffron to the skillet, and cook for 5-7 minutes, stirring occasionally, until the tomatoes break down and form a sauce.
