Ingredients

  • 2 pieces steak (ribeye, sirloin, or strip steak)
  • 0.33 cup soy sauce
  • 3 cloves garlic
  • 2 tablespoons brown sugar
  • 1 teaspoon ginger
  • 0.5 teaspoon black pepper
  • 2 tablespoons vegetable oil
  • 1 tablespoon unsalted butter
  • 2 stalks scallions
  • 1 teaspoon sesame seeds

Directions

Step 1

In a medium mixing bowl, combine soy sauce, minced garlic, brown sugar, grated ginger, and black pepper. Stir until the sugar dissolves and the marinade is well mixed.

Step 2

Place the steaks in a large resealable plastic bag or a shallow dish. Pour the marinade over the steaks, ensuring they are evenly coated. Seal the bag or cover the dish with plastic wrap and refrigerate for at least 1 hour, preferably 2-4 hours for deeper flavor. Turn the steaks halfway through to marinate both sides evenly.

Step 3

Remove the steaks from the marinade and pat them dry with paper towels. Reserve the marinade for later use.

Step 4

In a heavy-bottomed skillet or cast-iron pan, heat the vegetable oil over medium-high heat until it begins to shimmer.

Step 5

Carefully place the steaks in the hot skillet. Sear for 3-4 minutes on the first side without moving the steaks to achieve a nice crust.

Step 6

Flip the steaks and sear the other side for 2-3 minutes. Reduce the heat to medium and add the unsalted butter to the pan. As the butter melts, use a spoon to baste the steaks with the pan juices for additional flavor.

Step 7

For medium-rare doneness, cook until the internal temperature reaches 130°F (54°C). Adjust cooking time to your preferred doneness, adding 1-2 minutes per side as needed.

Step 8

Remove the steaks from the skillet and let them rest on a plate for 5-7 minutes to allow the juices to redistribute.

Step 9

While the steaks rest, pour the reserved marinade into the skillet and bring it to a boil over medium heat. Cook for 2-3 minutes, stirring frequently, until slightly thickened.

Step 10

Slice the steaks against the grain and drizzle the reduced marinade over the top.

Step 11

Garnish with chopped scallions and sesame seeds if desired. Serve immediately with your choice of sides, such as steamed vegetables, mashed potatoes, or rice.
