Ingredients

  • 1.5 cups Cooked brown rice
  • 1 cup Canned black beans (drained and rinsed)
  • 1 cup Canned chickpeas (drained and rinsed)
  • 0.5 cups Rolled oats
  • 1 Small red onion (finely chopped)
  • 3 Garlic cloves (minced)
  • 1 teaspoon Ground cumin
  • 1 teaspoon Smoked paprika
  • 1 teaspoon Chili powder
  • 2 tablespoons Soy sauce
  • 1 tablespoon Lemon juice
  • 0.5 cups Breadcrumbs (or gluten-free alternative)
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 2 tablespoons Olive oil (for cooking)

Directions

Step 1

In a large mixing bowl, mash the black beans and chickpeas using a fork or potato masher until they form a coarse paste with some chunks remaining for texture.

Step 2

Add the cooked brown rice, rolled oats, finely chopped red onion, minced garlic, ground cumin, smoked paprika, chili powder, soy sauce, lemon juice, salt, and black pepper to the bowl. Mix well until the ingredients are evenly incorporated.

Step 3

Gradually add the breadcrumbs to the mixture, stirring until the burger patties hold together when pressed. You may need slightly more or less breadcrumbs depending on the moisture level of the mixture.

Step 4

Divide the mixture into 4 equal portions and shape each portion into a burger patty. Place the patties on a plate and refrigerate for 15 minutes to help them firm up.

Step 5

Heat a non-stick skillet or grill pan over medium heat and add the olive oil.

Step 6

Cook the patties for about 4-6 minutes on each side, or until they are golden brown and heated through.

Step 7

Serve the patties on a bun or lettuce wrap with your favorite toppings like avocado, vegan mayo, tomato slices, or pickles. Enjoy!
