Ingredients

  • 2 tablespoons Olive oil
  • 2 pounds Ground beef (85% lean)
  • 1 large Yellow onion, chopped
  • 1 large Red bell pepper, chopped
  • 4 cloves Garlic, minced
  • 3 tablespoons Chili powder
  • 2 tablespoons Ground cumin
  • 1 tablespoon Smoked paprika
  • 0.5 teaspoons Ground cayenne pepper
  • 2 teaspoons Salt
  • 1 teaspoon Ground black pepper
  • 28 ounces Crushed tomatoes (28 oz can)
  • 2 tablespoons Tomato paste
  • 2 cups Beef broth
  • 15 ounces Black beans, drained and rinsed
  • 15 ounces Kidney beans, drained and rinsed
  • 1 medium Jalapeño, finely chopped (optional)
  • 0.25 cups Fresh cilantro, chopped (for garnish)
  • 0.5 cups Shredded cheddar cheese (for garnish)
  • 0.5 cups Sour cream (for garnish)

Directions

Step 1

Heat the olive oil in a large Dutch oven or heavy-bottomed pot over medium-high heat.

Step 2

Add the ground beef and cook, breaking it apart with a wooden spoon, until browned and fully cooked, about 7-8 minutes. Drain any excess fat if necessary.

Step 3

Stir in the chopped onion, red bell pepper, and minced garlic. Cook for 5-7 minutes until the vegetables are softened and fragrant.

Step 4

Add the chili powder, cumin, smoked paprika, cayenne pepper, salt, and black pepper. Stir well to coat the beef and vegetables in the spices.

Step 5

Mix in the crushed tomatoes, tomato paste, and beef broth. Stir until combined and bring the mixture to a simmer.

Step 6

Add the black beans, kidney beans, and optional jalapeño. Stir gently to incorporate.

Step 7

Reduce the heat to low, cover the pot, and let the chili simmer for 45 minutes, stirring occasionally to prevent sticking.

Step 8

Taste and adjust the seasonings if necessary. If the chili is too thick, you can add a bit more beef broth to reach your desired consistency.

Step 9

Serve hot, garnished with fresh chopped cilantro, shredded cheddar cheese, and a dollop of sour cream if desired.
