Ingredients

  • 5 medium Russet potatoes
  • 1 large Onion
  • 4 large Eggs
  • 2 tablespoons All-purpose flour
  • 0.25 cup Vegetable oil
  • 2 teaspoons Salt
  • 1 teaspoon Ground black pepper
  • 1 teaspoon Baking powder

Directions

Step 1

Preheat your oven to 375°F (190°C) and generously grease a 9x13-inch baking dish with vegetable oil or cooking spray.

Step 2

Peel the potatoes and onion, then grate them using a box grater or food processor with a shredding attachment. Transfer the grated mixture to a clean kitchen towel and wring out the excess liquid into a bowl.

Step 3

Let the liquid sit for a few minutes, allowing the starch to settle at the bottom of the bowl. Carefully pour out the liquid, leaving the potato starch behind. Add this starch back to the grated potato mixture for extra binding.

Step 4

In a large mixing bowl, beat the eggs. Add in the flour, vegetable oil, salt, pepper, and baking powder. Mix until well combined.

Step 5

Add the grated potato and onion mixture to the bowl with the egg mixture. Stir thoroughly to ensure an even distribution of ingredients.

Step 6

Pour the mixture into the prepared baking dish, spreading it out evenly.

Step 7

Bake in the preheated oven for 60 minutes, or until the kugel is golden brown and crispy on the edges.

Step 8

Remove from the oven and let it cool slightly for about 5-10 minutes before slicing and serving.
