Ingredients

  • 2 medium yellow squash
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 0.5 teaspoon paprika
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 0.25 cup Parmesan cheese
  • 1 tablespoon chopped fresh parsley

Directions

Step 1

Wash and dry the squash thoroughly and then cut them into 1/4-inch thick slices.

Step 2

In a large mixing bowl, combine olive oil, garlic powder, paprika, salt, and black pepper.

Step 3

Add the sliced squash to the bowl and toss them in the seasoning mixture until all pieces are evenly coated.

Step 4

Preheat the air fryer to 375°F (190°C) for about 3 minutes.

Step 5

Arrange the squash slices in a single layer in the air fryer basket. Depending on the size of your air fryer, you may need to do this in batches.

Step 6

Air fry the squash for about 12-15 minutes, shaking the basket halfway through cooking, until they are golden brown and tender.

Step 7

While the squash is still hot, sprinkle the Parmesan cheese over the top so it melts slightly.

Step 8

Transfer the squash to a serving plate and garnish with fresh parsley before serving hot.
