Ingredients

  • 1 pound Ground beef
  • 1 packet Taco seasoning
  • 0.25 cup Water
  • 1 head Romaine lettuce
  • 1 cup Cherry tomatoes
  • 1 cup Shredded cheddar cheese
  • 1 cup Black beans
  • 0.5 cup Sour cream
  • 0.5 cup Salsa
  • 2 cups Tortilla chips
  • 2 tablespoons Cilantro (optional)
  • 1 piece Lime (optional)

Directions

Step 1

In a skillet over medium heat, cook the ground beef until browned, about 6-8 minutes, breaking it into crumbles with a spoon.

Step 2

Drain any excess grease from the skillet, then stir in the taco seasoning and water. Simmer for 3-5 minutes until the liquid is mostly absorbed. Remove from heat and let it cool slightly.

Step 3

While the beef is cooking, wash and chop the romaine lettuce into bite-sized pieces and halve the cherry tomatoes.

Step 4

In a large salad bowl, combine the chopped romaine lettuce, cherry tomatoes, shredded cheddar cheese, black beans, and tortilla chips (crushed slightly for smaller pieces).

Step 5

In a small bowl, mix the sour cream and salsa together to create the dressing.

Step 6

Add the cooked taco meat to the salad bowl and toss gently to combine. Drizzle the sour cream-salsa dressing over the salad and toss again to evenly coat the ingredients.

Step 7

Garnish with freshly chopped cilantro and a squeeze of lime juice, if desired.

Step 8

Serve immediately and enjoy your flavorful Aimee's Specialty Taco Salad!
