Ingredients

  • 500 grams fresh spinach
  • 2 tablespoons olive oil
  • 1 medium yellow onion
  • 3 large garlic cloves
  • 1 teaspoon ground coriander
  • 0.5 teaspoon cumin powder
  • 1 teaspoon salt
  • 0.25 teaspoon black pepper
  • 200 grams plain yogurt
  • 2 tablespoons fresh cilantro
  • 1 tablespoon lemon juice
  • 0.5 teaspoon chili flakes (optional)

Directions

Step 1

Rinse the fresh spinach thoroughly under cold water, then roughly chop it and set aside.

Step 2

Peel and finely chop the onion and garlic cloves.

Step 3

Heat the olive oil in a large skillet over medium heat. Once hot, add the chopped onion and sauté for 3-4 minutes until softened and translucent.

Add the minced garlic to the skillet and cook for another 1 minute until fragrant, stirring continuously to prevent burning.

Stir in the ground coriander, cumin powder, salt, and black pepper. Cook for 30 seconds to toast the spices.

Add the chopped spinach to the skillet in batches, allowing it to wilt down before adding more. Stir the mixture frequently and continue cooking until all the spinach is wilted, about 5 minutes.

Once the spinach is tender and the liquid has mostly evaporated, remove the skillet from heat and let it cool for 5 minutes.
