Ingredients

  • 4 medium (approximately 1.5 lbs) Potatoes
  • 4 tablespoons Butter
  • 0.5 cup Milk
  • 1 teaspoon Salt
  • 0.5 teaspoon Pepper
  • 2 cloves Garlic (optional, minced)
  • 0.5 cup Cheddar cheese (optional, shredded)
  • 8 medium Tortillas
  • 2 tablespoons (for toasting) Cooking oil or butter

Directions

Step 1

Peel and dice the potatoes into evenly sized chunks for even cooking.

Step 2

Place the potatoes in a large pot and cover with water. Add a pinch of salt and bring to a boil over medium-high heat.

Step 3

Reduce the heat to medium-low and simmer until the potatoes are fork-tender, about 15-20 minutes.

Step 4

Drain the potatoes and return them to the pot. Mash with a potato masher until smooth.

Step 5

Add butter, warm milk, salt, and pepper to the mashed potatoes. Mix thoroughly until creamy. If you’d like additional flavor, stir in minced garlic and shredded cheddar cheese.

Step 6

Heat a skillet or griddle over medium heat and lightly grease it with cooking oil or butter.

Step 7

Spoon about 2-3 tablespoons of mashed potato onto the center of a tortilla and spread it slightly. Fold the tortilla in half or roll it into a burrito shape.

Step 8

Place the filled tortilla in the hot skillet and toast for 1-2 minutes per side, or until golden and slightly crispy.

Step 9

Repeat with the remaining tortillas and mashed potatoes.

Step 10

Serve warm, optionally with a side of salsa, sour cream, or guacamole for dipping.
