In a large skillet, heat the olive oil over medium heat. Add the chopped onion, diced carrots, and diced celery. Cook for 5-7 minutes, until softened.
Add the minced garlic and cook for 1 minute, until fragrant.
Increase the heat to medium-high and add the ground lamb or beef to the skillet. Cook until browned, breaking it up into crumbles with a wooden spoon.
Stir in the tomato paste and cook for 1-2 minutes, allowing the tomato paste to slightly caramelize.
Pour in the beef broth and Worcestershire sauce. Stir well to combine, then reduce the heat to low, letting the mixture simmer for 10 minutes to thicken.
