Ingredients

  • 2 tablespoons Laksa paste
  • 200 milliliters Coconut milk
  • 200 milliliters Chicken or vegetable stock
  • 100 grams Rice noodles
  • 100 grams Cooked chicken (shredded)
  • 4 large Prawns (optional)
  • 50 grams Bean sprouts
  • 2 tablespoons Fresh coriander
  • 1 whole Hard-boiled egg
  • 20 grams Cucumber (julienned)
  • 1 slice Lime
  • 1 teaspoon Fish sauce
  • 1 teaspoon Sugar
  • 1 tablespoon Vegetable oil

Directions

Step 1

Prepare all ingredients: soak the rice noodles in hot water for 5–8 minutes until softened, then drain and set aside. Julienne the cucumber, and boil the egg if not already done.

Step 2

Heat the vegetable oil in a medium-sized pot over medium heat. Add the laksa paste and sauté for 2 minutes until fragrant.

Step 3

Pour in the coconut milk and chicken or vegetable stock. Stir well, and bring the mixture to a gentle boil.

Step 4

Add the fish sauce and sugar to the broth, adjusting seasoning to taste.

Step 5

Reduce the heat to a simmer and add the shredded chicken and prawns (if using). Cook for 5 minutes or until the prawns are pink and fully cooked.

Step 6

In a serving bowl, place the drained rice noodles. Ladle the hot laksa broth over the noodles, ensuring the chicken and prawns are evenly distributed.

Step 7

Top the laksa with bean sprouts, fresh coriander, julienned cucumber, and the halved hard-boiled egg.

Step 8

Garnish with a slice of lime to squeeze over the soup just before eating.

Step 9

Serve immediately and enjoy your flavorful bowl of laksa!
