Ingredients

  • 1 pound Flank steak
  • 0.25 cup Cornstarch
  • 0.5 cup Vegetable oil
  • 0.5 cup Soy sauce
  • 2 tablespoons Dark soy sauce
  • 0.5 cup Water
  • 0.75 cup Brown sugar
  • 4 cloves Garlic
  • 1.5 teaspoons Ginger
  • 4 stalks Green onions

Directions

Step 1

Slice the flank steak against the grain into thin strips, approximately 1/4 inch thick.

Step 2

Place the steak slices into a large bowl. Add the cornstarch and toss to coat each piece evenly. Let it sit for 10 minutes while prepping the sauce.

Step 3

In a small saucepan over medium heat, add 2 teaspoons of vegetable oil. Sauté the minced garlic and grated ginger for about 1 minute until fragrant.

Step 4

Add the soy sauce, dark soy sauce, water, and brown sugar to the saucepan. Stir well, bring the mixture to a boil, then lower the heat and simmer for 2-3 minutes. Set aside to cool slightly.

Step 5

Heat the remaining vegetable oil in a large skillet or wok over medium-high heat. Once the oil is hot, add the coated beef slices, shaking off any excess cornstarch. Cook the beef in small batches so as not to overcrowd the pan, about 2 minutes per side, until crispy and browned. Remove and set aside on paper towels.

Step 6

Once all the beef is cooked, carefully drain any excess oil from the skillet while leaving about 1-2 tablespoons in the pan.

Step 7

Re-add the cooked beef to the skillet and pour the sauce over it. Stir everything together and cook for another 2 minutes, allowing the sauce to thicken and coat the beef.

Step 8

Slice the green onions into 2-inch pieces and add them to the beef. Toss to incorporate them and cook for another minute.

Step 9

Serve immediately with steamed white rice or your favorite side dish.
