Ingredients

  • 2 whole acorn squash
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper
  • 1 pound ground sausage (mild or hot, as preferred)
  • 1 medium yellow onion, diced
  • 3 cloves garlic cloves, minced
  • 1 teaspoon dry sage
  • 0.5 cup breadcrumbs
  • 0.25 cup grated Parmesan cheese
  • 2 tablespoons fresh parsley, chopped (optional for garnish)

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Slice each acorn squash in half lengthwise and scoop out the seeds and stringy pulp.

Step 3

Drizzle the cut sides of the squash with 1 tablespoon of olive oil, then sprinkle with 0.5 teaspoon of salt and 0.25 teaspoon of black pepper.

Step 4

Place the squash halves cut side down on a baking sheet lined with parchment paper or aluminum foil. Roast in the preheated oven for 30 minutes or until the flesh is fork-tender.

Step 5

While the squash is roasting, heat the remaining 1 tablespoon of olive oil in a large skillet over medium heat.

Step 6

Add the ground sausage to the skillet and cook, breaking it up with a wooden spoon, until browned and cooked through (about 7-8 minutes).

Step 7

Add the diced onion and cook for 3-4 minutes until softened. Stir in the minced garlic and sage, cooking for an additional minute until fragrant.

Step 8

Remove the skillet from heat and stir in the breadcrumbs and grated Parmesan cheese. Adjust seasoning with the remaining salt and pepper if necessary.

Step 9

Once the squash is done roasting, carefully flip the halves over and evenly divide the sausage mixture among the hollowed-out centers.

Step 10

Return the stuffed squash to the oven and bake for an additional 15-20 minutes, until the filling is golden and heated through.

Step 11

Remove from the oven and garnish with chopped parsley, if desired. Serve warm and enjoy!
