Preheat your oven to 400°F (200°C).
Slice the acorn squashes in half lengthwise and scoop out the seeds and fibers. Place the squash halves cut-side up in a baking dish.
Peel, core, and dice the apples into small cubes.
In a medium bowl, mix the diced apples with 2 tablespoons of melted butter, brown sugar, cinnamon, nutmeg, and salt. Stir until the apples are evenly coated.
Fill the cavity of each squash half with the spiced apple mixture, packing it gently.
If using pecans, sprinkle them over the apple mixture for added texture and flavor.
Divide the remaining 2 tablespoons of butter into small pieces and scatter them over the filled squash halves.
Pour the water into the bottom of the baking dish to help the squash stay moist while baking.
Cover the baking dish with aluminum foil and bake in the preheated oven for 30 minutes.
Remove the foil and bake for an additional 15 minutes, or until the squash is tender when pierced with a fork and the apples are caramelized.
Carefully remove from the oven and let cool for 5 minutes before serving. Serve warm as a delicious autumn-inspired side dish.
