Ingredients

  • 4 cups Baby spinach
  • 2 cups Kale
  • 1 medium Cucumber
  • 1 large Avocado
  • 1 large Carrot
  • 1 cup Cherry tomatoes
  • 0.25 cup Walnuts
  • 2 tablespoons Pumpkin seeds
  • 2 tablespoons Lemon juice
  • 2 tablespoons Extra virgin olive oil
  • 1 teaspoon Apple cider vinegar
  • 1 teaspoon Raw honey
  • 0.25 teaspoon Sea salt
  • 0.25 teaspoon Freshly ground black pepper

Directions

Step 1

Wash and dry the baby spinach and kale thoroughly. Tear the kale leaves into bite-sized pieces and add them to a large salad bowl along with the spinach.

Step 2

Slice the cucumber into thin half-moons and dice the avocado into cubes. Add them to the salad bowl.

Step 3

Peel and shred the carrot using a box grater or food processor. Add the shredded carrot to the bowl.
