Ingredients

  • 3 tablespoons olive oil
  • 1 medium yellow onion, finely diced
  • 5 cloves garlic cloves, minced
  • 28 ounces crushed tomatoes (canned)
  • 2 tablespoons tomato paste
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 0.5 teaspoon crushed red pepper flakes
  • 1 teaspoon granulated sugar
  • 0.25 cup red wine (optional)
  • 1 whole bay leaf
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon salt
  • 0.5 teaspoon fresh ground black pepper
  • 0.25 cup water (if needed for consistency)

Directions

Step 1

Heat a large saucepan over medium heat and add olive oil.

Step 2

Once the oil is warm, add the finely diced onion and sauté for 5-7 minutes until soft and translucent.

Step 3

Add the minced garlic and cook for another minute, stirring frequently to avoid burning.

Step 4

Stir in the tomato paste and cook for 2 minutes to caramelize slightly.

Step 5

Pour in the crushed tomatoes and stir to combine with the onion, garlic, and tomato paste.

Step 6

Add the dried oregano, dried basil, crushed red pepper flakes, sugar, and salt. Stir well to incorporate.

Step 7

Optional: Deglaze the pan with red wine and let it simmer for 1-2 minutes to enhance the flavor.

Step 8

Add the bay leaf to the sauce. If the sauce is too thick, stir in up to 1/4 cup of water to adjust the consistency.

Step 9

Reduce the heat to low and let the sauce simmer gently for 30 minutes, stirring occasionally to ensure it doesn't stick to the bottom.

Step 10

Remove the bay leaf and discard.

Step 11

Taste and adjust the seasoning with additional salt and pepper if needed.

Step 12

Stir in freshly chopped parsley right before serving for a burst of herby freshness.

Step 13

Serve warm over pasta, as a dipping sauce, or use as a base for your favorite recipes.
