Ingredients

  • 450 grams French green beans (haricots verts), trimmed
  • 2 tablespoons Unsalted butter
  • 1 tablespoon Olive oil
  • 2 medium Shallots, finely minced
  • 3 cloves Garlic, minced
  • 1 teaspoon Lemon zest
  • 1 tablespoon Lemon juice
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Freshly ground black pepper
  • 1 tablespoon Fresh parsley, chopped (optional)

Directions

Step 1

Bring a large pot of salted water to a boil. Add the French green beans and blanch them for 2-3 minutes, or until bright green and slightly tender. Drain and immediately transfer the beans to an ice bath to stop the cooking process. Once cooled, drain and set aside.

Step 2

In a large skillet, heat the unsalted butter and olive oil over medium heat until the butter is melted and sizzling.

Step 3

Add the minced shallots to the skillet and sauté for 2-3 minutes, or until they become translucent and fragrant.

Step 4

Stir in the minced garlic and cook for an additional 30 seconds, being careful not to let it burn.

Step 5

Add the blanched green beans to the skillet and toss to coat them evenly in the butter and aromatics. Cook for 4-5 minutes, stirring occasionally, until the beans are warmed through and slightly caramelized.

Step 6

Sprinkle the lemon zest over the green beans and squeeze in the lemon juice. Season with salt and freshly ground black pepper.

Step 7

Toss everything together and cook for another minute to allow the flavors to meld.

Step 8

Transfer the green beans to a serving dish and garnish with freshly chopped parsley, if desired. Serve immediately while warm.
