Ingredients

  • 3 lbs Chuck roast
  • 1 tsp Salt
  • 1 tsp Black pepper
  • 2 tbsp Olive oil
  • 1 Yellow onion, diced
  • 3 Carrots, peeled and cut into large chunks
  • 4 Russet potatoes, peeled and quartered
  • 4 Garlic cloves, minced
  • 2 cups Beef broth
  • 2 tbsp Worcestershire sauce
  • 2 Fresh rosemary sprigs
  • 2 Fresh thyme sprigs
  • 2 tbsp Cornstarch
  • 2 tbsp Cold water

Directions

Step 1

Season the chuck roast with salt and black pepper on all sides.

Step 2

Heat the olive oil in a large skillet over medium-high heat. Sear the roast on each side for 2-3 minutes, or until browned.

Step 3

Place the seared roast into the bottom of a large crock pot.

Step 4

Add the diced yellow onion, carrots, and russet potatoes around and on top of the roast.

Step 5

Sprinkle the minced garlic over the vegetables.

Step 6

In a medium bowl, mix together the beef broth and Worcestershire sauce. Pour the mixture over the roast and vegetables in the crock pot.

Step 7

Tuck the rosemary and thyme sprigs into the liquid, ensuring they are evenly distributed.

Step 8

Cover and cook on low for 8 hours, or until the roast is tender and easily falls apart with a fork.

Step 9

To make the gravy, carefully transfer the cooked roast and vegetables to a serving dish and cover to keep warm.

Step 10

Strain the liquid from the crock pot into a saucepan and bring it to a simmer over medium heat.

Step 11

In a small bowl, whisk together the cornstarch and cold water until smooth. Slowly stir the mixture into the simmering liquid, whisking constantly until the gravy thickens (about 1-2 minutes).

Step 12

Serve the pot roast hot with the vegetables and the prepared gravy spooned over the top.
