Ingredients

  • 1 4-5 lbs whole chicken
  • 1 12 oz can beer (preferably cherry or sherry-infused ale)
  • 4 tbsp unsalted butter
  • 2 tbsp cherry preserves
  • 2 tbsp dry sherry
  • 2 tsp paprika
  • 2 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp dried thyme
  • 1 tsp coarse salt
  • 1 tsp black pepper
  • 1 cup fresh cherries (optional, for garnish)
  • 2 tbsp olive oil

Directions

Step 1

Preheat your grill or oven to 375°F (190°C). If using a grill, set up for indirect heat.

Step 2

Remove any giblets from the chicken and pat the bird dry with paper towels.

Step 3

In a small bowl, mix together the paprika, garlic powder, onion powder, dried thyme, salt, and black pepper.

Rub the chicken all over with olive oil, then season generously with the spice mixture, including inside the cavity.

In a saucepan over low heat, melt the butter and stir in the cherry preserves and dry sherry until smooth. Remove from heat and let cool slightly.

Open the can of beer and pour out (or drink!) about half. Carefully pour 1 tablespoon of the cherry sherry butter mixture into the can. Make a few extra holes in the top of the can for better steaming.

Place the chicken over the beer can, with the can inserted into the cavity and the chicken sitting upright on its legs like a tripod.

Position the chicken on the grill or in your oven over indirect heat. Close the lid of the grill or oven door and cook for about 1.5 hours, or until the internal temperature of the thickest part of the chicken (thigh) reaches 165°F (74°C).

Brush the chicken with the remaining cherry sherry butter mixture every 20 minutes to create a glaze.

Step 10

Carefully remove the chicken and beer can from the grill or oven. Let the chicken rest for 10-15 minutes before gently removing the beer can.

Carve the chicken and serve. Optionally, garnish with fresh cherries for a pop of flavor and color.
