Ingredients

  • 1 large Red bell pepper
  • 1 large Yellow bell pepper
  • 1 large Green bell pepper
  • 1 large Red onion
  • 3 cloves Garlic
  • 2 tablespoons Soy sauce
  • 1 tablespoon Sesame oil
  • 2 tablespoons Olive oil
  • 0.25 teaspoons Ground black pepper
  • 0.5 teaspoons Salt
  • 2 teaspoons Sesame seeds
  • 2 tablespoons Fresh parsley or cilantro (optional, for garnish)

Directions

Step 1

Wash and dry the bell peppers. Cut the peppers in half, remove the seeds and white membranes, and slice them into thin strips about 1/4-inch wide.

Step 2

Peel and slice the red onion into thin wedges.

Step 3

Peel the garlic cloves and mince them finely.

Step 4

Heat the olive oil in a large skillet or wok over medium-high heat.

Step 5

Add the minced garlic to the skillet and sauté for about 30 seconds, stirring constantly, until fragrant.

Step 6

Increase the heat to high and add the sliced bell peppers and onions to the skillet. Stir frequently to prevent sticking.

Step 7

Cook the vegetables for 5-7 minutes, or until they begin to soften but still retain some crispness.

Step 8

Drizzle the soy sauce and sesame oil over the vegetables. Sprinkle with ground black pepper and salt, then toss to combine evenly.

Step 9

Lower the heat to medium and cook for an additional 2 minutes, allowing the flavors to meld together.

Step 10

Remove the skillet from heat and transfer the stir-fry to a serving dish.

Step 11

Garnish with sesame seeds and fresh parsley or cilantro, if desired.

Step 12

Serve immediately as a side dish or over rice or noodles for a complete meal.
