Pat the tilapia fillets dry with paper towels and season them on both sides with 1/2 teaspoon of salt and 1/2 teaspoon of ground black pepper.
Lightly dredge the seasoned tilapia fillets in the all-purpose flour, shaking off any excess.
In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Once the oil is hot, carefully add the tilapia fillets and sear them for 2-3 minutes per side until golden brown. Remove the fillets from the skillet and set aside on a plate.
Reduce the heat to medium and add the sliced onion to the skillet. Sauté for 3-4 minutes until softened and translucent.
Add the minced garlic to the onions and cook for an additional minute, stirring frequently to prevent burning.
Stir in the diced tomatoes and sliced green bell pepper, cooking for another 5 minutes until the vegetables begin to soften.
Add the sliced olives, rinsed capers, pickled jalapeños, and the remaining 1/2 teaspoon of salt and ground black pepper. Mix to combine.
Pour the chicken broth into the skillet and bring the mixture to a simmer. Let it cook for 3-4 minutes to allow the flavors to meld.
Return the seared tilapia fillets to the skillet, spooning some of the sauce over the fish. Cover the skillet with a lid and let the tilapia cook in the sauce for 5-7 minutes, or until the fish is cooked through and flakes easily with a fork.
Remove the skillet from the heat and sprinkle the chopped cilantro over the top of the dish.
Serve the Tilapia Veracruz immediately, garnished with lime wedges on the side. Pair with warm rice, freshly made tortillas, or a light salad for a complete meal.
