Ingredients

  • 16 ounces fresh spinach
  • 3 tablespoons butter
  • 1 medium yellow onion, finely chopped
  • 2 cloves garlic cloves, minced
  • 8 ounces cream cheese, softened
  • 1 cup sour cream
  • 2 cups shredded cheddar cheese
  • 1 cup grated Parmesan cheese
  • 1 cup panko breadcrumbs
  • 2 tablespoons olive oil
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 0.25 teaspoon paprika (optional, for garnish)

Directions

Step 1

Preheat your oven to 375°F (190°C). Grease a 2-quart casserole dish and set it aside.

Step 2

Rinse the spinach thoroughly and remove any tough stems. In a large skillet, heat 1 tablespoon of butter over medium heat. Add the spinach and sauté until wilted (about 3-4 minutes). Transfer the cooked spinach to a colander and press out excess liquid. Set aside.

Step 3

In the same skillet, melt the remaining 2 tablespoons of butter. Add the chopped onion and garlic cloves, cooking until softened and fragrant (about 4-5 minutes). Remove from heat.

Step 4

In a large mixing bowl, combine the softened cream cheese, sour cream, 1 cup of shredded cheddar cheese, 1/2 cup of Parmesan cheese, salt, and black pepper. Mix until smooth.

Step 5

Fold the cooked spinach and sautéed onion mixture into the cream cheese mixture until evenly combined.

Step 6

Transfer the spinach mixture to the greased casserole dish, spreading it evenly. Sprinkle the remaining shredded cheddar cheese evenly over the top.

Step 7

In a small bowl, combine the panko breadcrumbs, remaining Parmesan cheese, and olive oil. Mix until the breadcrumbs are evenly moistened. Sprinkle this topping over the casserole.

Step 8

Bake in the preheated oven for 20-25 minutes, or until the casserole is bubbling and the breadcrumb topping is golden brown.

Step 9

For extra flavor, sprinkle a light dusting of paprika over the top before serving, if desired.

Step 10

Allow the casserole to cool for 5 minutes before serving. Enjoy as a side dish or light main dish!
