Ingredients

  • 1.75 cups all-purpose flour
  • 0.75 cups unsweetened cocoa powder (preferably Dutch-processed)
  • 1.5 teaspoons baking soda
  • 0.5 teaspoons baking powder
  • 0.5 teaspoons salt
  • 0.5 cups unsalted butter, softened
  • 1.5 cups granulated sugar
  • 0.5 cups brown sugar, packed
  • 3 large eggs
  • 2 teaspoons pure vanilla extract
  • 1 cups buttermilk
  • 0.75 cups hot coffee

Directions

Step 1

Preheat your oven to 350°F (175°C). Grease and lightly flour two 9-inch round cake pans, then line the bottoms with parchment paper for easy removal.

Step 2

In a medium mixing bowl, sift together the all-purpose flour, cocoa powder, baking soda, baking powder, and salt. Set aside.

Step 3

In a large mixing bowl, use a hand mixer or stand mixer to cream the softened butter, granulated sugar, and brown sugar together on medium speed until light and fluffy, about 3 minutes.

Step 4

Add the eggs to the butter mixture one at a time, beating well after each addition. Mix in the vanilla extract.

Step 5

Reduce the mixer speed to low. Gradually add the dry ingredients in three additions, alternating with the buttermilk in two additions (beginning and ending with the dry ingredients). Mix just until combined; do not overmix.

Step 6

Carefully stir the hot coffee into the batter. The batter will be thin, but this is normal—it contributes to the cake's moist texture.

Step 7

Divide the batter evenly between the prepared pans and smooth the tops with a spatula.

Step 8

Bake in the preheated oven for 28-30 minutes, or until a toothpick inserted into the center of the cakes comes out clean or with a few moist crumbs.

Step 9

Allow the cakes to cool in their pans for 10 minutes, then run a knife around the edges and invert the cakes onto a wire rack. Remove the parchment paper and let the cakes cool completely before frosting.

Step 10

Frost and assemble with your favorite chocolate frosting or whipped ganache. Slice, serve, and enjoy the utter decadence of this divine treat!
