Ingredients

  • 4 large Russet potatoes
  • 4 tablespoons Unsalted butter
  • 1 medium, diced Yellow onion
  • 3 minced Garlic cloves
  • 4 cups Chicken or vegetable broth
  • 1 cup Heavy cream
  • 1 cup Milk
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 1 cup Shredded cheddar cheese
  • 4 slices, crumbled Cooked bacon
  • 2 stalks, sliced Green onions

Directions

Step 1

Peel and cut the potatoes into 1-inch chunks. Place them in a large pot, cover with cold water, and add a pinch of salt. Bring to a boil and cook until the potatoes are fork-tender, about 15 minutes.

Drain the cooked potatoes and mash them with a potato masher or ricer until smooth. Set aside.
