Ingredients

  • 3 tablespoons unsalted butter
  • 3 whole ripe peaches
  • 2 tablespoons granulated sugar
  • 0.5 teaspoons ground cinnamon
  • 0.75 cups all-purpose flour
  • 0.75 cups whole milk
  • 3 whole large eggs
  • 1 teaspoons vanilla extract
  • 0.25 teaspoons salt
  • 0.5 cups heavy cream
  • 1 tablespoons powdered sugar

Directions

Step 1

Preheat your oven to 425°F (220°C). Place a 10-inch oven-safe skillet or cast-iron pan in the oven to heat up while you prepare the batter.

Step 2

Peel and slice the peaches into thin wedges. Set aside.

Step 3

In a medium mixing bowl, whisk together the flour, milk, eggs, vanilla extract, and salt until smooth. The batter should have a consistency similar to heavy cream. Set aside.

Step 4

Carefully remove the hot skillet from the oven using oven mitts. Add the butter to the pan and swirl to coat the bottom and sides as it melts.

Step 5

Arrange the peach slices evenly across the bottom of the skillet. Sprinkle the granulated sugar and cinnamon on top of the peaches.

Step 6

Pour the batter evenly over the peaches, making sure not to disturb the arrangement of the slices.

Step 7

Return the skillet to the oven and bake for 18-20 minutes, or until the pancake is puffed and golden brown on the edges.

Step 8

While the pancake is baking, whip the heavy cream with the powdered sugar in a small bowl until soft peaks form.

Step 9

Once the pancake is done, remove it from the oven and let it cool slightly. The puffiness will deflate as it sits.

Step 10

Slice the pancake into wedges, drizzle with the whipped cream, and serve warm. Optional: Sprinkle with additional powdered sugar for garnish.
