Ingredients

  • 2 hearts Romaine lettuce
  • 1 cup Cherry tomatoes
  • 1 medium Cucumber
  • 1 cup Sweet corn kernels
  • 1 medium Red bell pepper
  • 0.25 small Red onion
  • 0.5 cup Feta cheese
  • 2 tablespoons Fresh parsley
  • 3 tablespoons Olive oil
  • 2 tablespoons Lemon juice
  • 1 teaspoon Honey
  • 1 teaspoon Dijon mustard
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Rinse and pat dry the romaine lettuce hearts. Chop them into bite-sized pieces and place them in a large mixing bowl.

Halve the cherry tomatoes and add them to the bowl.

Peel the cucumber if desired, dice it into small cubes, and add it to the salad.
