Ingredients

  • 8 slices Rye bread
  • 8 ounces Lean corned beef
  • 4 slices Reduced-fat Swiss cheese
  • 4 tablespoons Light Thousand Island dressing
  • 1 cup Sauerkraut
  • 1 bottle Olive oil spray
  • 1 teaspoon Butter (optional, for flavor enhancement)

Directions

Step 1

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

Step 2

Lightly spray one side of each slice of rye bread with olive oil spray. Place 4 slices, oiled side down, onto the prepared baking sheet.

Step 3

Spread 1 tablespoon of light Thousand Island dressing onto the non-oiled side of each bread slice on the baking sheet.

Step 4

Layer 2 ounces of lean corned beef onto each slice of bread. Top the corned beef with 1/4 cup of sauerkraut and 1 slice of reduced-fat Swiss cheese.

Place the remaining 4 slices of rye bread on top of each sandwich, oiled side facing up.
