Ingredients

  • 3 large eggs
  • 2 tablespoons milk
  • 0.25 teaspoons salt
  • 0.25 teaspoons black pepper
  • 1 tablespoon olive oil
  • 5 whole cherry tomatoes
  • 1 cup fresh spinach
  • 2 ounces goat cheese
  • 4 whole fresh basil leaves
  • 1 stalk green onion

Directions

Step 1

In a medium mixing bowl, crack the eggs and add the milk, salt, and black pepper. Whisk until fully combined and slightly frothy.

Step 2

Slice the cherry tomatoes in half, chop the fresh basil leaves, and finely slice the green onion. Set aside along with the spinach leaves.

Step 3

Heat a non-stick skillet over medium heat and add the olive oil. Once the oil is shimmering, add the cherry tomatoes and cook for 1-2 minutes until softened.

Step 4

Add the spinach to the skillet and stir gently until wilted, about 1 minute. Remove the tomatoes and spinach from the skillet and set aside.

Step 5

Reduce the heat to medium-low and pour the egg mixture into the skillet. Let it cook undisturbed until the edges start to set, about 1-2 minutes.

Step 6

Gently lift the edges of the omelet with a spatula to allow uncooked egg to flow to the edges. Repeat until most of the egg is set but the top remains slightly runny.

Step 7

Add the cooked tomatoes, spinach, goat cheese, basil, and green onion to one half of the omelet. Carefully fold the other half over the filling using a spatula.

Step 8

Let the omelet cook for 1 more minute to melt the cheese, then slide it onto a plate and serve immediately.
