  • 0.75 cups Granulated sugar
  • 6 large Egg yolks
  • 2 tablespoons Cornstarch
  • 1 teaspoon Vanilla extract
  • 0.5 teaspoon Ground cinnamon
  • 1 stick Cinnamon stick
  • 1 strip Lemon peel

Directions

Step 1

In a medium saucepan, combine the whole milk, cinnamon stick, and lemon peel. Heat the milk over medium heat until it just begins to simmer. Remove from heat and let steep for 10 minutes to infuse the flavors. Strain the milk to remove the cinnamon stick and lemon peel, then set aside.

Step 2

In a large bowl, whisk together the granulated sugar, egg yolks, and cornstarch until the mixture is smooth and pale in color.

Step 3

Slowly pour the warm milk into the egg mixture, whisking constantly to ensure the eggs do not curdle.

Step 4

Pour the mixture back into the saucepan and return it to the stove over medium-low heat. Cook, stirring constantly with a wooden spoon or silicone spatula, until the custard thickens enough to coat the back of the spoon (about 8-10 minutes). Do not allow the mixture to boil.
