Ingredients

  • 1 medium bottle gourd (lauki)
  • 2 tablespoons coconut oil
  • 1 teaspoon cumin seeds
  • 1 medium, chopped onion
  • 1 large, chopped tomato
  • 1 inch piece, grated fresh ginger
  • 3 cloves, minced garlic cloves
  • 1 small, chopped green chili
  • 0.5 teaspoon turmeric powder
  • 0.5 teaspoon red chili powder
  • 1 teaspoon coriander powder
  • 1 teaspoon salt
  • 2 tablespoons, chopped fresh cilantro
  • 1 cup water

Directions

Step 1

Peel the bottle gourd, remove the seeds if they are large, and chop it into small cubes.

Step 2

Heat the coconut oil in a large pan over medium heat.

Step 3

Add cumin seeds and let them sizzle for a few seconds until fragrant.

Step 4

Add chopped onion and sauté until it becomes translucent, about 3-4 minutes.

Step 5

Add the grated ginger, minced garlic, and chopped green chili. Sauté for another minute until aromatic.

Step 6

Stir in the chopped tomato and cook for about 5 minutes until it softens and the oil starts to separate.

Step 7

Add turmeric powder, red chili powder, coriander powder, and salt. Mix well and cook for another 2 minutes.

Step 8

Add the chopped bottle gourd to the pan and mix thoroughly with the spices.

Step 9

Pour in 1 cup of water, mix again, cover, and let it cook for about 15-20 minutes, or until the bottle gourd is tender.

Step 10

Stir occasionally and check for doneness by piercing a cube of bottle gourd with a fork.

Step 11

Once the bottle gourd is cooked and most of the water has evaporated, turn off the heat.

Step 12

Garnish with freshly chopped cilantro before serving.
