Ingredients

  • 1 Large cabbage head
  • 2 tablespoons Olive oil
  • 1 large Onion
  • 3 Garlic cloves
  • 250 grams Mushrooms
  • 1 medium Carrot
  • 150 grams Uncooked rice
  • 240 ml Vegetable stock
  • 3 tablespoons Tomato paste
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 teaspoon Dried thyme
  • 2 tablespoons Dill
  • 500 ml Water

Directions

Step 1

Remove the core from the cabbage and place the entire head in a large pot of boiling water for 5 minutes to soften the leaves. Carefully peel off each leaf and set aside to cool.

Step 2

Finely chop the onion, garlic, mushrooms, and carrot. Heat the olive oil in a pan over medium heat, add the onion and garlic, and sauté until translucent.

Add the mushrooms and carrot to the pan and continue cooking until the vegetables are soft. Mix in the rice and cook for another 5 minutes, stirring occasionally.

Pour in the vegetable stock, add the tomato paste, salt, pepper, thyme, and dill. Stir well and let simmer until the rice is half-cooked and liquid is mostly absorbed.
