Ingredients

  • 500 grams pumpkin
  • 1 large onion
  • 1 medium tomato
  • 1 large green chili
  • 1 inch ginger
  • 3 cloves garlic
  • 2 tablespoons coconut oil
  • 1 teaspoon mustard seeds
  • 1 teaspoon cumin seeds
  • 0.5 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 1 teaspoon coriander powder
  • 1 teaspoon salt
  • 0.5 teaspoon garam masala
  • 2 tablespoons fresh coriander leaves
  • 1 cup water

Directions

Step 1

Peel the pumpkin and remove the seeds. Cut it into small cubes of approximately 1-inch.

Step 2

Finely chop the onion, tomato, and green chili. Grate or finely chop the ginger and garlic.

Heat coconut oil in a large pan over medium heat.

Add mustard seeds to the oil. When they start to splutter, add cumin seeds.
