Ingredients

  • 1 medium-sized Bottle gourd (kaddu)
  • 400 ml Coconut milk
  • 200 ml Almond milk
  • 100 grams Coconut sugar
  • 4 pieces Cardamom pods
  • 10 strands Saffron strands
  • 2 tablespoons Raisins
  • 2 tablespoons Cashew nuts
  • 2 tablespoons Almonds
  • 1 tablespoon Coconut oil

Directions

Step 1

Peel and grate the bottle gourd. Set it aside.

Step 2

In a large pan, heat the coconut oil over medium heat.

Step 3

Add the grated bottle gourd to the pan and sauté for about 5 minutes until it starts to soften.

Add the coconut milk and almond milk to the pan. Stir well to combine.

Bring the mixture to a gentle simmer and let it cook for 20 minutes, stirring occasionally until the bottle gourd is fully cooked.

Crush the cardamom pods and add them, along with the saffron strands, to the kheer. Stir well.
