Ingredients

  • 2 whole jalapeño peppers
  • 1 cup fresh cilantro leaves
  • 0.5 cup fresh parsley leaves
  • 2 cloves garlic cloves
  • 2 tablespoons lime juice
  • 2 tablespoons extra-virgin olive oil
  • 0.5 cup vegan mayonnaise
  • 2 tablespoons nutritional yeast
  • 1 tablespoon apple cider vinegar
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Directions

Step 1

Start by preparing the vegetables. Remove the stems from the jalapeño peppers and deseed them carefully to control the heat level. If you prefer your sauce spicier, leave the seeds in.

Step 2

Rinse the cilantro and parsley leaves thoroughly and pat them dry or use a salad spinner to remove excess moisture.

Step 3

Peel the garlic cloves and roughly chop them.

Step 4

In a blender or food processor, combine the jalapeño peppers, cilantro, parsley, and garlic. Blend until the mixture is finely chopped and well combined.

Step 5

Add the lime juice, olive oil, vegan mayonnaise, nutritional yeast, apple cider vinegar, salt, and black pepper to the blender.

Step 6

Blend on high speed until the mixture is smooth and creamy. You may need to stop occasionally to scrape down the sides with a spatula.

Step 7

Taste the sauce and adjust seasoning if needed. Add additional lime juice or salt according to your taste preference.

Step 8

Transfer the Vegan Aji Verde sauce to an airtight container and refrigerate for at least 30 minutes to allow the flavors to meld.

Step 9

Serve as a condiment with grilled vegetables, as a dipping sauce, or drizzled over rice and beans. The sauce will keep in the refrigerator for up to 5 days.
