Ingredients

  • 2 tablespoons olive oil
  • 1 pound ground lamb or ground beef
  • 1 medium yellow onion, diced
  • 2 medium carrot, diced
  • 2 stalks celery stalks, diced
  • 2 cloves garlic cloves, minced
  • 2 tablespoons tomato paste
  • 2 tablespoons Worcestershire sauce
  • 1 cup beef or chicken stock
  • 1 cup frozen peas
  • 1 cup frozen corn
  • 1 teaspoon fresh rosemary, finely chopped
  • 1 teaspoon fresh thyme, finely chopped
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 pounds russet potatoes, peeled and chopped
  • 4 tablespoons unsalted butter
  • 0.5 cup whole milk
  • 0.25 cup parmesan cheese, grated

Directions

Step 1

Preheat the oven to 400°F (200°C).

Step 2

Heat olive oil in a large skillet over medium heat. Add the ground lamb or beef and cook until browned, breaking it apart with a spoon. Drain excess fat if necessary.

Step 3

Add the diced onion, carrot, and celery to the skillet. Cook for 5 minutes, or until the vegetables begin to soften.

Step 4

Stir in the minced garlic and tomato paste, cooking for an additional 1 minute until fragrant.

Step 5

Mix in the Worcestershire sauce, beef or chicken stock, rosemary, and thyme. Let the mixture simmer for 5 minutes, allowing the flavors to meld and the sauce to slightly thicken.

Step 6

Stir in the frozen peas and corn. Season with salt and black pepper. Remove the skillet from heat and set aside.

Step 7

Meanwhile, place the peeled and chopped potatoes in a large pot. Cover with water and add a pinch of salt. Bring to a boil and cook until the potatoes are fork-tender, about 12-15 minutes.

Step 8

Drain the potatoes and return them to the pot. Mash them until smooth, then stir in the butter, whole milk, and parmesan cheese. Season with salt to taste.

Step 9

Transfer the meat and vegetable mixture to a 9x13-inch baking dish, spreading it out evenly.

Step 10

Spoon the mashed potatoes over the meat layer, spreading them out smoothly with a spatula. Use a fork to create decorative ridges on the surface if desired.

Step 11

Place the dish in the preheated oven and bake for 20-25 minutes, or until the mashed potato topping is golden and slightly crisp on the edges.

Step 12

Remove from the oven and let the Shepherd's Pie cool for 5-10 minutes before serving. Enjoy this cozy and flavorful dish with family or friends!
