Ingredients

  • 2 cups All-purpose flour
  • 0.33 cup Granulated sugar
  • 2.5 teaspoons Baking powder
  • 0.5 teaspoon Salt
  • 0.5 cup Unsalted butter (cold, cubed)
  • 0.5 cup Heavy cream
  • 1.5 teaspoons Vanilla extract
  • 1 Egg
  • 0.75 cup Dried cherries (roughly chopped)
  • 2 tablespoons Turbinado sugar (for topping, optional)
  • 1 tablespoon Milk or cream (for brushing tops)

Directions

Step 1

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

Step 2

In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt until well combined.

Step 3

Add the cold, cubed unsalted butter to the dry ingredients. Use a pastry cutter or your fingers to work the butter into the flour mixture until it resembles coarse crumbs.

Step 4

In a small bowl, whisk together the heavy cream, vanilla extract, and egg. Pour this wet mixture into the dry ingredients and stir gently until just combined.

Step 5

Fold in the chopped dried cherries, being careful not to overmix the dough.

Step 6

Turn the dough out onto a lightly floured surface. Gently knead the dough a few times to bring it together, then shape it into an 8-inch round disk, about 1-inch thick.

Step 7

Using a sharp knife or bench scraper, cut the disk into 8 equal wedges (like a pizza). Place the wedges onto the prepared baking sheet, leaving about 1 inch of space between them.

Step 8

Brush the tops of the scones with milk or cream and sprinkle turbinado sugar for a sweet, crunchy topping (optional).

Step 9

Bake in the preheated oven for 16–18 minutes, or until the scones are golden brown and cooked through.

Step 10

Remove the scones from the oven and let them cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Step 11

Serve warm or at room temperature, accompanied by clotted cream, butter, or your favorite jam. Enjoy!
