Ingredients

  • 1 pound Ground beef
  • 1 packet Taco seasoning
  • 0.67 cup Water
  • 1 cup Salsa
  • 1 15-ounce can Canned black beans, rinsed and drained
  • 1 15-ounce can Canned corn, drained
  • 4 cups Tortilla chips
  • 2 cups Shredded cheddar cheese
  • 1 cup Shredded lettuce
  • 1 cup Diced tomatoes
  • 0.5 cup Sour cream
  • 2 tablespoons Chopped fresh cilantro (optional)

Directions

Step 1

Preheat your oven to 350°F (175°C).

Step 2

Heat a large skillet over medium heat and brown the ground beef until fully cooked, breaking it up with a spatula as it cooks. Drain any excess fat.

Step 3

Stir in the taco seasoning and add the water. Simmer for 5 minutes until the mixture thickens slightly.

Step 4

Add the salsa, black beans, and corn to the skillet. Stir to combine, then remove from heat.

Step 5

Lightly grease the bottom of a 9x13-inch casserole dish. Spread half of the tortilla chips evenly across the bottom of the dish.

Step 6

Pour half of the meat mixture over the tortilla chips, spreading it into an even layer. Sprinkle 1 cup of shredded cheddar cheese evenly over the meat mixture.

Step 7

Repeat the layers with the remaining tortilla chips, meat mixture, and shredded cheddar cheese.

Step 8

Cover the casserole with aluminum foil and bake in the preheated oven for 15 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is melted and bubbly.

Step 9

Remove the casserole from the oven and let it cool for 5 minutes.

Step 10

Top with shredded lettuce, diced tomatoes, sour cream, and fresh cilantro, if desired. Serve immediately and enjoy!
