  • 2 medium potatoes, peeled and diced
  • 1 medium zucchini, diced
  • 1 cup green beans, trimmed and cut into 1-inch pieces
  • 1 cup frozen peas
  • 1 leaf bay leaf
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 0.5 teaspoon ground black pepper
  • 2 tablespoons fresh parsley, chopped

Directions

Step 1

Heat olive oil in a large pot over medium heat.

Step 2

Add the diced onion, sliced carrots, and sliced celery to the pot. Sauté for 5-7 minutes, stirring occasionally, until the vegetables are softened.
