Ingredients

  • 500 grams boneless chicken thighs (or beef cubes)
  • 6 pieces fresh green chilies (adjust to taste)
  • 1 large onion
  • 4 pieces garlic cloves
  • 1 inch ginger
  • 1 bunch cilantro (fresh coriander leaves)
  • 2 tablespoons vegetable oil (or cooking oil of choice)
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 0.5 teaspoon turmeric powder
  • 1 teaspoon salt
  • 1 cup water
  • 1 piece lime (for garnish)

Directions

Step 1

Wash and pat dry the chicken thighs (or beef cubes) and cut them into bite-sized pieces.

Step 2

Slice the onion into thin strips, mince the garlic cloves, and finely grate the ginger.

Step 3

Remove the stems from the green chilies and slice them into thin rounds. For less heat, remove the seeds.

Step 4

Chop the cilantro leaves finely and set them aside for later use.

Step 5

Heat the vegetable oil in a large skillet or pot over medium heat.

Step 6

Add the sliced onion to the skillet and sauté until golden brown, about 5-7 minutes.

Step 7

Stir in the minced garlic and grated ginger. Cook for 1-2 minutes, stirring frequently to avoid burning.

Step 8

Add the chicken (or beef) pieces to the skillet and sear until lightly browned on all sides, about 5 minutes.

Step 9

Sprinkle in the ground cumin, ground coriander, turmeric powder, and salt. Mix well to coat the meat evenly with the spices.

Step 10

Add the sliced green chilies to the skillet and stir well. Reduce the heat to low and let the mixture cook for 5-7 minutes, allowing the flavors to meld.

Step 11

Pour in the water and bring the mixture to a gentle simmer. Cover with a lid and cook for 20-25 minutes for chicken (or 30-35 minutes for beef), stirring occasionally.

Step 12

Once the meat is tender and the sauce has thickened slightly, remove the skillet from the heat.

Step 13

Garnish with fresh cilantro leaves and a squeeze of lime juice before serving.

Step 14

Serve hot with steamed rice, naan, or crusty bread. Enjoy your homemade Tai's Green Chili!
